Every great pizza is decided before the oven door closes. Three variables do most of the work: hydration, fermentation, and heat.
Hydration — the ratio of water to flour — controls the crumb. Low hydration gives a tight, cracker-like structure; push past sixty-five percent and you get the open, airy interior of a Neapolitan rim. The trade-off is handling: wetter dough is livelier and less forgiving.
Fermentation is flavor. A dough mixed and baked the same day tastes like flour. Give it twenty-four to seventy-two hours of cold fermentation and enzymes break starches into sugars, building the complexity that makes a crust worth eating on its own.
